Castello is located in Soave along the main street in the heart of the medieval village. The town, surrounded by the walls of the majestic castle, is famous for the production of quality wines, with a fresh and enveloping flavor. Guardians of the past and a treasure trove of an ancient history, Cantina del Castello is an expression of the agricultural, wine and social fabric of the region. Respecting both the environment and nature where the winery began and still operates to this day.
The winery processes grapes coming from the vineyards located in the heart of the Soave Classico region (from where the wine also gets it name), whose soil is of volcanic origin. Since its origins, Cantina del Castello has also produced red wines from Valpolicella, such as: Amarone and the Ripasso. The first bottles produced coming from the sixties, are the same that today are jealously stored in the winery’s private collection.
In the heart of the ancient medieval village of Soave, at the foot of the Scaliger Castle, in Corte Pittora 5, stands the palace of the Counts Sanbonifacio, which since the 1960s has been home to Cantina del Castello.
According to the legend, the palace’s origin is connected to the Templar history and today represents the perfect combination between tradition and innovation. Here the past meets the present to create fine wines which contribute to the promotion and the valorization of the territory of Verona.
This essential link to history characterizes the philosophy of the winery that produces wines based on the research and the respect of the tradition of the Soave.

Still white wine of straw yellow color with greenish reflections. Beautiful freshness, rich and floral aromas with notes of white pulp fruit (golden and green apples), balsamic notes (pine and juniper), and white flowers. Soft and harmonious taste with a persistent and velvety aftertaste.
Grapes are harvested by hand in early October with destemming and soft pressing. Fermented in stainless tanks, aged on the lees for 3-4 months and then aged an additional month in bottle.
Pairs well with first courses, chicken, fish, and light cheeses. Ideal as an aperitif.

Still white wine with straw yellow color with pale green reflections. Intense aroma with floral notes (chamomile and acacia). Slight presence of ripe citrus fruits. Harmonious and enveloping flavors with a good sapidity and minerality given by the volcanic soils. Long and warm aftertaste.
Harvested by hand in early October. Destemming and soft pressing into stainless tanks. Aged on the lees for 12 months. Then bottle aged for an additional 3 months.
Recommended as an aperitif with appetizers. Great with risottos, first courses in general, and with any fish-based dishes.

Sparkling white wine with brilliant straw yellow color with greenish reflections. Easy to drink with floral scents. Notes of white fruit, including pear, and a presence of vegetal notes. A marked sapidity and fine persistent pearl.
Grapes are harvested by hand in late September. Hand sorted, destemmed, and soft pressed into stainless tanks. Long Charmat method with prolonged aging on the lees. Additionally aged in bottle 1 month.
Great for starters through dessert. Pairs well with first courses, white meat, and fish.

Intense ruby red wine with highlights of orange as it ages. Intense aroma of cherry, blackberry, and nuances of vanilla. Lengthy palate progression, underscoring the elegance of the aromas, with well-balanced, velvety tannins.
Grapes are harvested by hand in early October. The wine is poured over the skins of Amarone grapes (ripasso) which gives a second fermentation obtaining greater phenolic substances such as anthocyanins and tannins still present on the Amarone skins, leading to more structure. Aged 12 months in stainless tanks, 12 months in oak barrels, and 6 additional months in bottle.
Paired well with braised meats, stews, and game.
70% Corvina, 15% Molinara, 15% Rondinella grapes

Deep ruby red with garnet highlights. Intense fruit bouquet with hints of cherry, black cherry, wild berries, vanilla, raisins, and tropical fruits. Full-bodied palate, warm, smooth, with well-balanced, velvety tannins and an impressively lengthy development.
Hand harvested with a careful selection of grapes at the beginning of October. Only the healthiest grapes are chosen when they have reached perfect ripeness. After 3 months drying in controlled rooms, the grapes are pressed and placed in small tanks where it begins a slow fermentation for 25-30 days. Fermentation ends in steel tanks for 6 months, then aged 24-30 months in oak barrels, and an additional 12 months in bottle.
Pairs well with red meats, game, and mature cheeses. Also great as an after-dinner meal, paired with chocolates and cigars.
